Ingredients
- For the crust
- 3/4 cup all-purpose flour (about 3.4 oz)
- 1/4 cup powdered sugar
- 3 tablespoons pine nuts, toasted and coarsely chopped
- 3 tablespoons avocado oil
- 1 tablespoon cold water
- Cooking spray
- For the filling
- 1/2 cup granulated sugar
- 1/4 cup allulose
- 2 tablespoons all-purpose flour
- 1 teaspoon grated lemon rind
- 1/2 cup fresh lemon juice
- 2 large eggs
- 1 large egg white
- 1 tablespoon powdered sugar, for dusting
Steps
- Heat the oven to 350°F.
- Pulse the flour, powdered sugar and pine nuts in a food processor. Add the oil and water and pulse 3 to 5 times, until it looks like coarse meal.
- Press the mixture into an 8-inch square baking dish coated with cooking spray. Bake 20 minutes, until lightly browned. Lower the oven to 325°F.
- Whisk the sugar, allulose, flour, lemon rind, lemon juice, eggs and egg white until smooth. Pour over the crust.
- Bake at 325°F for 20 minutes, until set. Cool completely in the pan, then cover and chill at least 2 hours.
- Dust with the powdered sugar and cut into 16 squares.
Heart-healthy notes
Lightened: avocado oil replaces the butter in the crust, a third of the sugar is swapped for allulose, the dusting sugar is halved, and the salt is gone. Each square is about 110 calories.
Note: Allulose browns faster than sugar, so check the filling at 17 minutes. Adapted from Cooking Light.
