Ingredients
- 3 medium sweet potatoes (about 2 lb)
- 3 tablespoons avocado oil, divided
- 1/2 teaspoon black pepper, divided
- 1/4 cup fresh lime juice
- 2 tablespoons warm water
- 2 teaspoons honey
- 1 jalapeño, seeded and minced
- 3 cups shredded napa cabbage
- 1 cup sliced red onion
- 1/3 cup unsalted pumpkin seeds, toasted
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
Steps
- Set up the grill for indirect heat: one side medium-high, the other side off.
- Peel the sweet potatoes and cut them lengthwise into 1/2-inch slices. Toss with 1 tablespoon of the oil and 1/4 teaspoon pepper.
- Grill the slices on the unheated side, lid closed, 12 minutes per side, until tender. Move them to the hot side and grill 2 minutes per side, until charred.
- Whisk the remaining 2 tablespoons of oil and 1/4 teaspoon pepper with the lime juice, water, honey and jalapeño in a large bowl.
- Cut the sweet potatoes into strips and add them to the bowl with the cabbage, red onion, pumpkin seeds, green onions and parsley. Toss.
Heart-healthy notes
Lightened: 3 tablespoons of oil instead of 5, no salt (the original used 3/4 teaspoon), and unsalted pumpkin seeds. Sweet potatoes and cabbage bring nearly 6 grams of fiber per serving.
Note: No grill? Roast the sweet potato slices at 425°F for 25 minutes, turning once. Toast the pumpkin seeds in a dry skillet. Adapted from Cooking Light.
