Ingredients
- 1 tablespoon reduced-sodium soy sauce, or 2 tablespoons Low-Sodium Soy Sauce Substitute
- 2 teaspoons toasted sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon crushed red pepper
- 2 cups thinly sliced napa cabbage
- 1/2 cup shredded red cabbage
- 1/2 cup julienned yellow squash
- 1/2 cup matchstick-cut carrot
- 1/4 cup diagonally sliced green onions
Steps
- Whisk the soy sauce, sesame oil, vinegar, honey, ginger and red pepper in a large bowl.
- Add the vegetables, toss well, and let stand 10 minutes before serving.
Heart-healthy notes
Lightened: honey and extra red pepper replace bottled sweet chili sauce, which is mostly sugar, and there's a little less sesame oil. Red cabbage adds color and fiber.
Note: Great with the Spicy Bulgogi or alongside grilled fish. Adapted from Cooking Light.
