Ingredients
- 2 teaspoons extra-virgin olive oil, divided
- 1 cup thinly sliced yellow onion
- 1 cup thinly sliced red onion
- 1/4 cup sliced shallots
- 3 garlic cloves, minced
- 1/2 cup low-sodium beef broth
- 2 cups green beans, trimmed
- 2 tablespoons balsamic vinegar
- 4 beef tenderloin steaks (4 oz each), trimmed of visible fat, or 1 lb flank steak
- 1/4 teaspoon black pepper
- Cooking spray
Steps
- Heat 1 teaspoon of the oil in a medium saucepan over medium-high heat. Cook the onions and shallots 6 minutes, then the garlic 1 minute.
- Add the broth and cook 4 minutes, until the onions are tender and the liquid is almost gone.
- Add the green beans and vinegar, cover, and cook 4 minutes, until crisp-tender. Stir in the remaining teaspoon of oil and keep warm.
- Season the steaks with pepper. Heat a cast-iron skillet over medium-high heat and coat with cooking spray. Cook the steaks 3 minutes per side, or to the doneness you like.
- Let the steaks rest 5 minutes, then serve with the green beans.
Heart-healthy notes
Lightened: olive oil replaces the butter, the salt is gone, the broth is low-sodium, and the steaks are trimmed. Tenderloin and flank are among the leanest beef cuts, and a 4-ounce portion keeps saturated fat in check.
Note: Flank steak is the budget pick; slice it thinly against the grain. For a side, roast cubed red potatoes with olive oil and fresh thyme instead of the original's packaged mashed potatoes with Parmesan. Adapted from Cooking Light.
