Ingredients
- 2 teaspoons avocado oil
- 4 boneless, skinless chicken breast halves (6 oz each)
- 1/2 teaspoon black pepper
- 1/4 cup low-sodium chicken broth
- 2 tablespoons honey
- 2 teaspoons chopped fresh thyme
- 2 garlic cloves, thinly sliced
- 1 tablespoon cider vinegar
- 1 tablespoon stone-ground mustard (low-sodium if you can find it)
Steps
- Heat the oven to 400°F.
- Heat the oil in a large ovenproof skillet over medium-high heat. Season the chicken with pepper and brown it 2 minutes per side. Move it to a plate.
- Add the broth, honey, thyme and garlic to the pan and bring to a boil, scraping up the browned bits. Cook 2 minutes.
- Stir in the vinegar and mustard and cook 1 minute. Return the chicken, spoon the sauce over it, and bake 10 minutes, until the chicken reaches 165°F.
- Let the chicken rest 5 minutes. Meanwhile, simmer the sauce on the stove for 2 minutes, until syrupy, and spoon it over the chicken.
Heart-healthy notes
Lightened: 2 tablespoons of honey replace 1/4 cup of maple syrup, the salt is gone, and the broth is low-sodium. Skinless chicken breast is lean, and the mustard and vinegar give the glaze its punch.
Note: Also good with skinless chicken thighs or pork tenderloin. Serve with steamed green beans and brown rice. Adapted from Cooking Light.
