Ingredients

  • 4 mahi mahi fillets
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons extra-virgin olive oil
  • 2 cups cherry tomatoes
  • 2/3 cup finely diced shallots
  • 4 garlic cloves, minced
  • 2 cups baby spinach
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh basil

Steps

  1. Pat the fillets dry and season both sides with the pepper and garlic powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the fish without moving it until golden, about 3 minutes, then flip and cook about 3 minutes more. Move the fish to a plate.
  3. Add the tomatoes to the same pan and cook until they start to blister, about 4 minutes. Stir in the shallots and garlic and cook about 1 minute, until fragrant.
  4. Pour in the broth, vinegar and lemon juice. Simmer about 4 minutes, until the tomatoes slump into a sauce. Stir in the spinach until it wilts, then the lemon zest and basil.
  5. Return the fish to the pan and spoon the sauce over the top to serve.
Heart-healthy notes

Lightened: olive oil replaces the butter, the added salt is gone, and the broth is low-sodium. Garlic powder, lemon and vinegar carry the flavor, and spinach adds greens. Mahi mahi is a lean, low-fat fish.
