Ingredients
- 1 1/2 tablespoons avocado oil, divided
- 4 wild Alaskan halibut fillets (6 oz each)
- 1/4 teaspoon black pepper
- Pinch of potassium chloride salt substitute (optional)
- 2 tablespoons chopped shallots
- 1 teaspoon minced garlic
- 1 cup chopped yellow bell pepper
- 1/2 cup chopped plum tomato
- 1 tablespoon sherry vinegar
- 1/2 teaspoon smoked paprika
- 1 tablespoon chopped fresh parsley
Steps
- Heat 2 1/4 teaspoons of the oil in a large nonstick skillet over medium-high heat. Season the halibut with pepper and the salt substitute, if using.
- Cook the fish 3 minutes per side, until it flakes easily with a fork. Move it to a plate and keep warm.
- Add the rest of the oil to the pan. Cook the shallots and garlic 1 minute.
- Add the bell pepper, tomato, vinegar and paprika and cook 3 minutes, until the pepper is tender. Stir in the parsley and spoon the relish over the fish.
Heart-healthy notes
Halibut is a lean, low-fat fish. The salt is now an optional pinch of salt substitute, and sherry vinegar and smoked paprika do the flavor work. Avocado oil keeps the fat unsaturated.
Note: Serve with a simple spinach salad. The relish is also good on grilled chicken. Adapted from Cooking Light.
