Ingredients
- 1 pouch (8.8 oz) precooked plain brown rice
- 1 tablespoon extra-virgin olive oil
- 8 oz medium shrimp, peeled and deveined
- 3 garlic cloves, minced
- 1/4 cup water
- 2/3 cup frozen green peas
- 2 cups baby spinach
- 1 tablespoon white wine vinegar
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon ground turmeric
- 2 tablespoons chopped fresh parsley
Steps
- Heat the rice according to the package.
- Heat the oil in a large skillet over medium-high heat. Cook the shrimp 2 minutes, add the garlic, and cook 1 minute more, until the shrimp are done. Move them to a plate.
- Bring the water to a simmer in the pan. Add the peas, cover, and cook 2 minutes.
- Stir in the rice, shrimp, spinach, vinegar, red pepper and turmeric and cook 1 minute, until the spinach wilts. Top with parsley.
Heart-healthy notes
The 3/4 teaspoon of kosher salt was nearly all of the original's sodium, and it's gone. Brown rice, peas and spinach make it a fiber-rich bowl, and vinegar brightens it.
Note: Pick a rice pouch with no added salt; some flavored ones carry a lot of sodium. Adapted from Cooking Light.
