Ingredients

  • 1 pouch (8.8 oz) precooked plain brown rice
  • 1 tablespoon extra-virgin olive oil
  • 6 oz lean ground turkey
  • 1 teaspoon fennel seeds, lightly crushed
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper
  • 5 garlic cloves, thinly sliced
  • 1 package (6 oz) fresh baby spinach
  • 1/2 oz Parmigiano-Reggiano, grated (about 2 tablespoons)

Steps

  1. Heat the rice according to the package.
  2. Heat the oil in a large skillet over medium-high heat. Add the turkey, fennel, paprika and red pepper and cook 4 minutes, breaking it up, until browned.
  3. Add the garlic and cook 30 seconds, stirring.
  4. Add the spinach and toss until it begins to wilt, about 30 seconds. Stir in the rice and cook 1 minute. Sprinkle with the cheese.
Heart-healthy notes

Lightened: lean ground turkey seasoned with fennel replaces processed hot turkey Italian sausage, which carried most of the sodium, and the Parmesan is cut in half. Spinach and brown rice add fiber.

Note: Fennel, paprika and red pepper are what make Italian sausage taste like sausage, without the salt. Adapted from Cooking Light.
